Brad'sabakin': Summer baking event in France

A general forum about issues and life in the bakery

Postby Jeremy on Thu Jul 03, 2008 10:08 am

Oh how lucky you all were, indeed!
Jack (sideburns) and I commiserated our unlucky fortune of being so far away while the gang was in France! We met on Tuesday a day before Jack was off to Washington to work for congress, hope he can fix it since our politico's are so inept!
Anyway, please send photo's and any fab formulas, maybe Mick or one of you all would make a wiki page for us?
Ben how often did you go off to the bicycle for a spin? Any cols you attack or see any of the racers from le tour?
JC, are you the fellow from Oz?
Adam your eye's were closed at the dinner photo, was it the flash or the wine?
John, I love that T-Shirt!
Brad, where is the next bake in?

Looks like it was fun, if gas keeps going up I may just have to move to Bethesda?

Jeremy, mom ami,

It seems to me that Conzieu is where we want to be but Bethesda is where we are - 'slife.

You got to be patient - people have lots of photos - including Ben in full lycra - but it's 4.00 p.m. and I've been baking since 5.00 a.m and there's this evening and tomorrow to go and these things take time.

Lovely to talk to you on the phone.

You bakers have such difficult hours! I baked at 3:oo am this moning myself, my cat was hungry so I got out of bed and pulled out my Miche from the fridge, shaped, and went back into bed till about 5:00am, resumed by putting my large Creuset al forno and cranked up the flames!
Read a few posts, when the thermometer read something like 500 F degrees, I plucked out the pot, dropped in the loaf, albeit slightly sticking to the banneton, and covered with lid!
Baked and was really nice looking, I think Creuset should start making cloches or a bread hearth insert made of enamled cast iron?
Loaf is lovely, will send a link to my site when I get home this afternoon to show it off!
Mick mon Ami tres grande avec le nez perce, kidding, I will ring you up this evening or maybe on Friday, will talk!
I am impatient, I am jealous and well I guess I can wait for all bread related porn as well formula's that I am sure I will have to fenagle from you some how, hmmmm maybe schnapps? Jack say oi!

But yes, it does sound like everyone had a fantastic time. Brad, even thought I couldn't make it, thanks for hosting it. I'm sitting in a cramped apartment in Washington DC with the air-conditioning cranked up full, wishing I could have been there, and that's without having seen the photos that I'm sure will be along in due course.

Jeremy's right, we commiserated our bad fortunes in being the wrong side of the Atlantic in a nice little Vietnamese place in New York. Thanks again Jeremy :).

Hopefully next year, wherever the bread crew shall meet, I'll be able to come along and share the fun :).

Look forward to the photos![/url]

Four Heros

Image

Brad, who arranged and hosted the weekend. Never mind the baking, the menus should be chronicled.

Image

Volker, who was so generous in sharing his skills whilst at the same time being a very nice guy (I just loved the way he tied Brad up in knots over quantities – the straightest face in the business).

Image

Marie. On Sunday morning Brad took Volker to see a French bakery on his way back to the station. On the strength of that visit Marie, who had been baking since 4.00 a.m., came over that afternoon, stunned us with a demonstration of baguette making, stayed to dinner and didn’t leave until about midnight.

Image

Brad’s Bonne-Mere who, with her partner Dennis, came for Saturday and Sunday, bringing with her a home-made wild boar head pate (this to be served before Brad’s wild boar cooked over-night in the masonry oven).

Plenty more to come.

Les Bakers

Image

My travelling companion Adam (well, to and from Gevena & Culoz + two hours at Culoz station because the buggers went swimming and forgot to pick us up). He didn’t need an Eve to pass the apples.

Image

Ben, the mighty cyclist of whom more later (making you wait Jeremy).

Image

John sporting the famous Bethesdabakin’ tee shirt.

Image

A first meeting with Pete (Pab) with whom we set the world to rights several times

Image

The disgustingly young Jonathan. Looks like a flour smuggler doesn’t he.

Thanks for posting that superb photo of me Mick...you chose well :? In retaliation I've uploaded some photos and video of you

Photos can be found at photobucket here. I haven't had a chance to edit them or anything yet so I thought it'd be easier to give you the link to the album rather than linking to individual photos that might disappear. If we get round to making a wiki or blog then maybe some of them can go there.

I'm not sure whether photobucket can handle serving the videos I took so I've put them on picassaweb here instead. Obviously the speed of your internet connection will affect how long they take to load....some are relatively long but hopefully helpful. If they're really grainy then click on the google icon in the bottom right hand corner of the video and choose "Original size".

Does anyone know whether we could make a new section on the Bethesdabakin' wiki to cover Brad'sabakin?

Hi Jeremy, yes I'm the one who has recently appeared on the Oz site. Need to post about my own casserole baking adventures over there with some bread porn for you!

Enjoy,

Jonathan

Edit: PS. Brad and Mick, if you'd rather not have the videos of you available then just let me know, but I thought they'd be really helpful for people.

Ok first request, pate recipe, Brad?
Oi Jack is a sort of skin head, punk thing, never-mind!
JC looking forward to meet you one day in OZ, Bethesda wherever we can bake, don't mind Mick, he said I was young when I first met him!
Adam always looks famished, Pete, nice to see you! Brad, terrine and bread recipes!
Volker, gruss!
Marie, we need videos of the baguette demo....I am so needy!

Thanks Mick for your hard work and where is the KC Jones hat?
