Braised chicken with olive and dill dumplings

Soothing, warming, packed with garlic and spices, everything needed to restore your head and heart. The grated carrot produces a subtle roughness of texture, much like a homestyle hot beetroot borscht you might see in a Ukrainian kitchen. If you want to make it vegetarian, replace the chicken with chunks of aubergine, pumpkin, kale and red capsicums, and season very well before cooking.
