2023 turned out to be a superb year for my Sourdough Masterclasses – so many happy students, so many positive comments, and most of all, so much great breadmaking! Classes are held at Cookery School at Little Portland Street, just minutes away from Oxford Circus in the heart of London, and bookings are made via their website, here (or phone: 020 7631 4590/email info@cookeryschool.co.uk). We’ll list any additional classes as they are announced, so do check back on this page if you can’t make any of the dates shown.
The class includes tuition in a small group (no more than 12 or 14 people); you’ll make three different loaves from scratch; learn my approach to mixing, kneading, folding and shaping; get tips for baking the perfect loaf and how to create steam in the oven and most of all, be led towards achieving the crust and crumb, taste and texture you’ve always aspired to. We’ll also cover making a sourdough starter from scratch; refreshing a starter; and there’ll be a host of tips and techniques which I bring from more than 30 years of experience. Best of all, there’s no washing up to be done!
If you arrive by 8:45am, there’s time for tea, coffee and a bite to eat before we begin. Classes run from 9am to around 4pm, and after a busy morning, we’ll pause for a delicious lunch, including bread that I’ve baked for the class. The afternoon is more relaxed, with time for a tea or coffee break, probably with a Cookery School chocolate or two.
